Edamame

I got my son to eat edamame over the weekend. That is the ONLY green veggie he is currently willing to put into his mouth without spitting it back out. I guess it's a bit of progress!

I was snacking on it in front of the tv and like all foods, he runs up to me saying he wants he wants. That's the thing with toddlers... he can have the same exact meal in his bowl but he would want to eat what's on my plate. I squeezed out the pea from the pod and made this "boop" sound to kind of make it fun. He popped it in his mouth and asked for more. I was actually shocked since Tristan is not a veggie eater. He would only eat corn and pototoes, which I don't consider real veggies. For a while I minced all his veggies very fine and mixed it in his congee which he would use his tongue to find and spit it out or put it in his little fingers and hand it straight to me. I tried to hide peas in his food over the weekend, which I thought he did ok eating, but a day later, I found dried peas all over the living room floor... I guess he spit them out and left a trail.

Edamame will be the new snack at home now. I read up on it and seems like it has most of the nutrition he needs - Vitamin A, protein, fiber, iron and calcium all in a little package!

Edamame is a great snack. My mom served it often. I loved it as a kid in the summertime, because she would serve it chilled from the fridge. She preferred a little salt on it; I've always liked it plain. Even now I prefer it to popcorn when watching TV or the movies. So it's good that you're getting your son started off early on those healthy snacks! :)

I should try some with Kai-Li! Currently she is a big congee fan, I sneak in veggies and eggs as well, and sometimes she will eat it all sometimes spit it out.
She loves corn as well! lol
I know it's so hard at this age to get them to eat healthy food!

My maternity leave plans ... I start leave 2 weeks before due date (6/29), and I come back Nov 1 -- so about 4 months overall.

I love edamame also and I am glad Tristan would eat it. He's a smart kid for knowing to pick put the stuff that he doesn't like. I am lucky that Ky-An would eat anything that touches his mouth, like his dad. I have a feeling I won't be as lucky with the next one though. I hope you have a great eater in September. I know how stressful picky eaters are.

How funny that you are also having a girl (me too!), have a toddler son, and is due at the same time. Are you my long lost twin sister! :)
